Anyone who has ever been to Austria and visited a restaurant feel as hungry as a horse while reading in the menu such dishes as Speckknödel, Kaiserschmarrn, Käsespätzle, Frittatensuppe, potato salad with Schnitzel. Those who know nothing about them would be pleased to learn about one dish at least. And it will be ... (drum whirl) Käsespätzle!
The dish is easy to cook, but the most important - it is delicious! And you do not have to be a trained chef for this.
So, get ready! Today we will cook a delicious dish! And believe me, the recipe is extremely tempting. Follow it and in the end, you are rewarded with the seductive scent of cheese.
Stop talking! Let's stark cooking!
400g flour, salt, 5 eggs, nutmeg, 100 ml milk, approx. 50 ml water, 2 tbsp. melted butter, 200g Emmental cheese, 2 onions, 2 tbsp. ghee.
Knead the flour, eggs, nutmeg, milk and a little salt into a smooth mixture in a bowl. Add just enough water so that the mixture runs off a spoon. Leave to stand for 30 minutes. In the meantime, grate the cheese finely and bring salted water to boil in a pan. Scape a few spoonfuls of the mixture from a wooden board into the boiling salted water. Leave it in the water to cook for a few minutes. Repeat this procedure until you have used up all the mixture. You know when the noodles a cooked because they rise to the surface of the water. Remove the noodles from the water with a slotted spoon, drain and sauté in butter. Then put alternate layers of noodles and grated cheese in a soufflé dish, cover and bake in an oven at approx. 100 ̊C to melt the cheese. Cut the onions into rings, sauté in the ghee until golden brown and serve with the noodles.
